Learn to make cheese

Join cheesemaker and organic farmer Carol Lake at Dancing Dog Farm for a unique culinary experience.

At our hands-on Beginner Soft Cheesemaking Class, attendees will learn to make a remarkably simple and tasty yogurt cheese called “labneh,” quick, easy and economical ricotta, a versatile pressed cheese from India called paneer, and a delicious, lemon and local honey dessert cheese. You will also learn how to make a chevre, or goat cheese, and fromage blanc.

All of these can be easily replicated in a home kitchen, with simple, inexpensive ingredients and equipment. Learn what type of equipment is needed, the best ingredients to use and where to buy them, and how to safely make, season and store artisan cheese. The class fee is $55 and no supplies are needed.

Class dates are April 20, May 4 , May 26, June 9 and June 16. More classes will be held in the summer, and private classes for groups of 5 or more are also available. Classes run approximately 2.5 hours.

A parent-child cheesemaking class will be held April 22, from 10 a.m. to 12:30 p.m., for ages 6 and up. The day will begin with a herd of Nubian and Nigerian Dwarf dairy goats. Attendees will learn about what they eat and the snacks they love, and attendees will also get to feed the goats. Next, each child get’s a chance to milk a goat if they desire or just play with one of the baby goats. After milking, attendees will learn how to make mozzarella cheese, ricotta cheese and homemade butter. Children must be accompanied by an adult. The class fee is $70. Bring another guest for an additional $20. Fee includes supplies for the class and cheese tastings.
