At Happy Valley, secret sauce is the boss

Each year as Father’s Day nears, the teachers and the young students of Happy Valley School in Peterborough head first to the pantry and then to the kitchen to concoct a sticky sweet treat that gets the summer off to a sizzling start. Here’s the recipe as shared by school director Kim Proctor. She did say she modified one ingredient to keep the Happy Valley Father’s Day sauce a “secret.” As for the dads of Happy Valley, there’s little secret about what they’ll be getting this year. But they’ll sure act surprised.


Sauté together:

4 medium onions, chopped

6 cloves garlic, minced

6 tbls. butter

Add to Mixture:

3 cups brown sugar

3 cups water

3 cups ketchup

2 tsp. paprika

9 tbls. vinegar

9 tbls. Worcestershire Sauce

5 tsp. chili powder

Putting it together:

Bring to a boil and then let simmer until it thickens. Pour sauce into prepared canning jars. Secure with lid and cool before storing.
