Locals contribute to new cookbook

Several locals are featured in the upcoming book “Old Farmer’s Almanac Reader’s Best Recipes and the Stories Behind Them.”

Linda Ruth, Dariana Travis and Cynthia Schlosser, all of Peterborough, contributed recipes to the cookbook. Below, Schlosser shares her reciped for baked pineapple dressing.

“The Old Farmer’s Almanac cookbook called for recipes with a history. This recipe was brought to a family Thanksgiving by my Aunt Agnes Nord many, many years ago and since then, my mother (Louella Nord Schlosser) has served it for holidays with ham or pork roast – and is a nice accompaniment to a holiday buffet.”

Baked Pineapple Dressing

1 (20 oz) can crushed pineapple

3/4 c. sugar

3 T. cornstarch

1/2 tsp. salt

2 eggs

1 tsp. vanilla

1 T. butter

cinnamon

Mix all ingredients listed except butter and cinnamon

Place mixture in a buttered casserole dish

Dot with butter and sprinkle with cinnamon

Bake at 350 degrees for 1 hour and 15 minutes
