Wilton: Oliver’s opens on 101

Passing by the newly erected sign for Oliver’s Restaurant on Route 101, visitors may notice the restaurant’s logo includes a Labrador wearing a chef’s hat.

That dog is the “Oliver” of the name, explained the restaurant’s owner, Ed Goss. Goss said the restaurant is named for the chocolate Labrador he and his wife once owned that would always be excited to see them come home.

“We want people to have that same feeling when they come into our restaurant,” said Goss. “We want people to feel like they’re coming home.”

Goss, who was formerly involved in cyber security, said the restaurant is a new venture for him, born out of need after he was laid off  in February of 2015. With assistance from the Southern New Hampshire Small Business Development Corporation, Goss and his wife, Maggie Goss, secured the financing they needed to start their own business. They closed on the former Gary’s Harvest Restaurant on Sept. 29, and are in the midst of renovating the space, with a tentative opening date of Dec. 16.

“I grew up in an Italian-Polish family,” said Goss. “Everything that we did revolved around food. I’ll be bringing a bit of that background here.”

While some of the food might have Italian or Polish influences, said Goss, he’s planning on some standard fare of breakfast and soup, stews, sandwiches and hamburgers for lunch.

“I call it healthy comfort food,” said Goss, who said he plans to use some local ingredients, including eggs, greens and vegetables in his recipes. 

Oliver’s will be moving into the former Gary’s Harvest Restaurant on Gibbon’s Highway.

Gary’s has moved to Wilton’s Main Street, and is now open under the management of the former Gary’s owner’s son, Kirk Burelle.
