Wilton meat cutter to retire the business after 29 years

Wilton meat processor Darrell Fisk will be retiring this year, after nearly 30 years in business.

Fisk, who owns and operates Big D’s Professional Meat Cutters, purchased his meat cutting equipment from a friend in 1989, set up in his barn, and processed 15 deer for local hunters. Last year, he said, business had boomed so much that he was processing between 450 and 500 animals. Nearing retirement age, he said, the work has become too much for him.

“It’s not fun anymore – it feels more like a job,” he said.

Fisk, who also works as a candy maker for Ben’s Sugar Shack in Temple, said between a growing problem with arthritis, and difficulty retaining full-time employees come the hunting season, and an increase in slaughtering and butchering domesticated animals such as steer and pig continually extending what was once intended to be a seasonal business, he’s decided to hang up his meat-cutting trade.

“It just gets to the point where you need some sleep,” Fisk said.

Fisk said he was originally going to simply try to scale back his business by limiting the number of animals he processed. But he admitted he had difficulty saying ‘No,’ to people.

“At that point, it was just easier to say no to everyone and be done with it,” he said.

Fisk thanked the customers and employees he’s had over the years. His favorite part of the job has been speaking with the hunters who brought their deer to him for processing, he said.

“Deer hunters love to talk. I probably know some stories that I shouldn’t know,” he said. “I always get the interesting stories and their adventures.”

Fisk said he will finish his processing commitments for this year, and then put up his equipment for sale.
